Curried creamy vegan pasta with chickpeas, zucchini and mushrooms 🍄

• 125 g dried chickpeas
• 1/4 tsp baking soda
• 100 g penne
• 1 onion, chopped
• 1/2 big zucchini, chopped
• 10 small mushrooms, chopped
• 1 tsp coconut oil
• 1 tbsp curry powder
• 1 tsp sweet paprika
• 200 ml almond milk

đź“ŽMethod
1. (One day in advance) Place the dried chickpeas and baking soda in a bowl filled with water. Soak them overnight. Drain and rinse the chickpeas.
2. Cook pasta according to package directions. Drain well.
3. Place zucchini and chickpeas in a pot with plenty of water, bring them to a boil and let them boil for 20 minutes. Drain well.
4. Using a hand mixer, whisk the milk for 5 minutes.
5. Place all the ingredients except penne in a pot, bring them to a boil and let them boil for 5 minutes. Reduce heat and boil for another 10 minutes.
6. Add pene, stir and serve.
