Curried Cauliflower Soup with Roasted Chickpeas

VEG FRIENDLY 🌱 DF GF

Ingredients:
– 1 tbsp avo oil (or veggie broth to sauté veg)
– 1 yellow onion (chopped)
– 3 lg carrots (peeled & chopped)
– 1 head of cauliflower (chopped)
– 1 tbsp grated ginger
– 3 cloves of 🧄 chopped
– 1 tsp turmeric
– 1.5 tsp cumin
– 1 tbsp curry powder (I used red curry paste)
– 1 container organic veggie broth
– 1 can full fat coconut milk
– Salt & pep

Directions:
1. Heat oil at medium/low heat and + onions & carrots, sauté for 4-5 mins until onions are translucent.
2. Add in the ginger, garlic, turmeric, cumin & curry powder, cook for 1 min.
3. Add cauliflower, veggie broth, & coconut milk, increase heat and let boil for 5 mins.
4. Reduce heat and simmer for 15 mins.
5. Blend w immersion blender or use a blender.
6. Add s&p to taste
7. Topped with roasted chickpeas (below) & @pulsekitchenpenticton vegan chz

ROASTED CHICKPEAS

– 1 can drained & rinsed chickpeas
– Drizzle of olive oil
– Juice of 1 lemon
– Salt & Pepper
– 1-2 tsp garlic powder

Preheat oven to 425C, mix all ingredients in a bowl, put on baking sheet and bake for 25 minutes or until crispy.
