??Crispy Tofu with Black Bean Sauce ??

INGREDIENTS:
For the tofu:
1 tbsp oil
1 block Super Firm Tofu – (patted dry & cut into thin triangles
2 tbsp ground turmeric
2 tbsp ground garlic
6 tbsp nutrional yeast
2 tbsp tamari
For the sauce:
2 tbsp sesame oil
3 large garlic cloves minced
1 small knob of ginger (minced)
1 tbsp black bean paste
1 cup black beans
2 tbsp rice wine vinegar
2 tbsp tamari
½ tbsp. agave
1 tbsp sriracha
¼ cup vegetable stock
½ tsp white pepper
1 tbsp corn starch
METHOD:
For the tofu:
Heat a frying pan over medium high heat until hot , then add oil
Mix together the turmeric, garlic & nutritional yeast
Coat both sides of tofu with the mixture.
Carefully add the tofu pieces to the hot oil & DO NOT MOVE the tofu for about 3 -4 minutes!
Add the tamari
Flip the tofu and cook the other side for another 3 – 4 minutes
For the sauce:
Heat a frying pan over medium high heat until hot, then add oil
Add the garlic and cook for about 20 -30 seconds
Add the black bean paste and stir
Add all of the other ingredients (except for the cornstarch) stir and cook for 2 -3 minutes or until the beans are heated thru.
Gradually add the corn starch until the sauce reaches the desired consistency.
To Plate:
You can add some white rice or greens for the base. Top with the tofu slices arranged in a tree shape , the sauce and finish with some corn, green onions and ancho chili powder.
