🍃 Crispy Tofu HARVEST Bowl 🍂
we really love a harvest bowl here! there’s something so nourishing and grounding about autumnal foods and flavors and I’m totally leaning into it with this recipe! there are 2 main characters – crispy tofu bites & spicy sweet delicata squash💥
❈ romaine + kale
❈ crispy tofu: (1/4 block tofu breaded in 2 tbsp chickpea flour, 1 tbsp nutritional yeast, smoked paprika, garlic powder, salt, pepper + “egg” wash: 2 tbsp almond milk, 1 tsp ground flax or egg replacement)
❈ cayenne cinnamon delicata squash — fully inspired by @upbeetanisha — go check out all of her amazing recipes!
❈ add-ins: apple slices, lentils, slivered almonds
❈ topped it all of with @nuttinordinary black pepper cashew cheese and a maple balsamic vinaigrette
slice delicata squash into 1/2 inch thick pieces, add 1/4 tsp cinnamon, dash of cayenne, 1 tsp maple syrup & olive oil. Cut tofu into cubes and prepare chickpea flour breading and “egg” wash in two small bowls. Dip tofu cubes in “egg” wash and breading before placing on a baking sheet with the squash. Bake at 350 degrees for 20-25 minutes! Top on a bed of romaine + kale, with apples, almonds, lentils, and @nuttinordinary cashew cheese. for the balsamic vinaigrette combine 1 tbsp balsamic vinegar with 1/2 tbsp maple syrup
