Crispy chipotle tofu
Tofu: 1 firm tofu pressed
Lime juice: Juice of ½ lime
Salt: 1 t
Pepper: 2 t
Cornflour: 1 T
Shallots: 2 finely chopped
Pepper: 1 finely chopped
Basil: handful
Oil for frying
For sauce:
Soya sauce: 2 T
Chipotle paste: 1 T
Tomato paste: 1 T
Water: 1/3rd cup
-Break pressed tofu into tiny pieces, coat with lime juice, salt and pepper and dust with cornflour
– Heat oil in a skillet. When oil is hot add tofu and stir fry till crispy and golden.
– Push tofu to one side of the skillet and add a bit more oil to the other side
– Add shallots into the oil and cook till translucent, then add peppers and basil mix well
– Whisk all the ingredients listed under sauce and pour into the skillet
– Season and serve with rice or tortillas
