Creamy vegan pumpkin risotto?

I was so excited to be back in my kitchen after 5 days of road tripping and since fall is officially here I had to use some pumpkin for lunch?

One of our family friends made pumpkin chutney, I used it in this risotto and trust me it was freaking AMAZING (still drooling)?

Ingredients (3 servings):
1 tbsp of olive oil
2 small or one large onion, finely chopped
210g of (risotto) rice
a splash of white wine
400ml of water
9 tbsp of pumpkin chutney
salt and pepper to taste
fresh chopped parsley (optional)

Heat the oil in a pan and fry the onions for about 3 minutes. Add the rice, constantly stirring, then the white wine and about 1/4 of the water. Stir in the chutney and leave covered on low heat for about 40 minutes, stirring occasionally. In the end, add parsley, salt and pepper and serve with some more parsley?
