?Creamy Thai Red Curry with Tofu (泰式咖喱豆腐)

This lovely red curry dish has a smooth and creamy texture, and deliciously exotic flavours from the fresh lemongrass, galangal, kaffir lime, ground cumin, and lime juice. Also, the gravy base is made with coconut cream. ??

Ingredients?(2-3 servings):
1 block firm tofu, cubed
1/2 carrot, sliced
1 tomato, wedged
6-8 okras, cut into half

2 lemongrass (white part only)
6 kaffir lime leaves
4 slices galangal
1 tsp dried chilli flakes
1 tsp chilli powder
1 tsp turmeric powder
1 tsp ground cumin powder
2 tbsp vegetable oil
100ml Kara coconut cream
1 cup water
1 tbsp soy sauce
2 teaspoon coconut sugar
Salt to taste
Some of lime juice

Sauté lemongrass, chilli flakes and galangal for half a minute, follow by adding in all the powder, kaffir lime leaves and carrot. Sauté for half a minute, then add in tomato, tofu, okra, water, soy sauce, sugar and salt. Stir and mix well. Cover the lid and let simmer until carrot is slightly tender, add coconut cream and lime juice, mix well. Cover the lid, cook it on low heat until the sauce thicken, around 3-5 minutes. Remove from heat and it’s ready to serve! Enjoy!
