Creamy Taco Pasta by @vegamelon¬†ūü§§¬†You’ll only need one pot and some basic ingredients! Get the recipe:

‚Äčone-pot taco pasta (serves 3)
-1 onion, diced
-4 cloves garlic, minced
-2 green chilis, minced
-1 bell pepper, diced
-1 tbsp taco seasoning (see below)
-8 oz (225g) dry pasta
-1 1/2 cups water, plus more as needed
-1 1/2 cups tomato sauce / marinara
-2 cups cooked corn
-1 1/2 cups cooked black beans
-3 tbsp tahini
In a skillet, heat some oil/water and add the onion, garlic, and chilis. Sauté for 5 minutes, then mix in the bell pepper + taco seasoning. Once fragrant, stir in pasta, water, and tomato sauce. Cover the skillet and simmer on medium heat for 10 minutes, stirring occasionally to prevent sticking, then add in corn and beans. Once the pasta is cooked through (about 5 more minutes), mix in the tahini. Season with salt and pepper to taste, then serve warm.

-1/4 tsp each: garlic powder, onion powder, red chili flakes, dried oregano
