Tomatoes: 3 cut in quarters⠀
Onions: 2 cut in quarters⠀
Ginger: 1 inch roughly chopped⠀
Garlic: 1 clove⠀
Cooked baby potatoes: 4-5⠀
Blanched cauliflower: 1 C⠀
Sweet corn: ½ C tinned⠀
Water: upto 1 C⠀
Soya cream: ⅓ C⠀
Saffron milk: 4-5 strands of saffron mixed with 2 T of warm oat milk⠀
Butter: 1 ½ T⠀
Whole spices:⠀
Cloves: 3⠀
Cardamom: 2⠀
Peppercorns: 1 t⠀
Cinnamon: 1 inch⠀
Star anise: 2⠀
Dried red chilli: 1⠀
Spice powders:⠀
Turmeric: 1 t⠀
Chilli powder: 2 t⠀
Garam masala: 1 t⠀
Salt to taste⠀
-Heat ½ T butter in a pan and add listed whole spices, tomatoes, onions, ginger and garlic . Add a splash of water and leave to simmer on a low heat with the lid on for 30 minutes⠀
– Pick the large spices out and blend into a smooth sauce. Pass sauce through a sieve. – Heat 1 T butter to a pan. Add the listed spice powders, and the prepared sauce. – Add ½ C water, season and bring to a simmer – Add potatoes, cauliflower and sweetcorn – Stir in saffron milk and soya cream. Season as desired.⠀
