creamy mushroom and spinach pasta sauce made using silken tofu!


so i’ve never used silken tofu in a sauce before but thought i’d try it out after seeing this deliciously ella video ! (also i made a tik tok cooking this pasta) which if you see i didn’t rate it that highly since 1. i added way too much water to make the mushroom stock so it was very diluted, 2. i didn’t add enough miso paste (but i added more in after) 3. i used wholewheat pasta for the first time in forever and it’s just not as tasty but i made additions to the pasta after the tik tok and included them down below ! if you want to see the tik tok 🤣🤣 my username is maylenemiller, aaanyway here’s the recipe

ingredients for 2
– 2 servings pasta
– 200g mushrooms (i used baby portobello and used up a few ‘speciality’ mushrooms i had left)
– 2 garlic cloves
– 1 tbsp nutritional yeast
– 1 tbsp white or brown miso paste
– 15g dried porcini mushrooms
– 100ml boiling water (and more for the pasta)
– handful of chopped fresh chives
– large handful of spinach
– 150-300g silken tofu
– olive oil
– salt and pepper


1. first soak the dried porcini mushrooms and leave them for at least 10 mins
2. put the pasta on to cook
3. meanwhile in a frying pan add some olive oil and then fry the mushrooms until brown
4. once the pasta is ready drain and set aside
5. drain the porcini mushrooms and save the mushroom stock
6. in a food processor add the silken tofu, drained porcini mushrooms, miso paste, nutritional yeast, salt and pepper and blitz
7. then pour in a little of the mushroom stock and blend until you get the right consistency adding more water if you want it less thick
8. then in the pasta pan turn the heat back on to low-medium and pour n the sauce, fried mushrooms, handful of chopped chives and the spinach and cook and stir until the spinach is wilted
9. serve with more chives and fresh parsley if you like
