Creamy Lemon Gnocchi with Arugula and Cherry Tomatoes 🍋
Today is one of those lazy cooking days for me, so I figured why not make something healthy for lunch in only 10 Minutes!
200g Gnocchis (some gnocchis contain dairy milk, so take a look at the ingredients first when you grab them in store)
1/4 Lemon Juice
50g plant-based Cream (add more if you like to have more sauce)
2 tbsp Water
80g Cherry Tomatoes
2 Scallions (~40g)
Salt & Pepper
1️⃣ Chop the scallions and cut the cherry tomatoes in half. Mix the cream with water, salt & pepper. Juice the 1/4 Lemon.
2️⃣ Heat up a non-stick pan and fry your gnocchis until they’re getting some golden edges. Lower the heat, add the cream mix and the lemon juice.
3️⃣ When your gnocchis are combined with the cream, turn down the heat and stir half of the arugula & all cherry tomatoes in.
4️⃣ Plate your dish and add the rest of the arugula on top.
