Creamy Lemon Basil Corn Pasta

This combo of lemon and garlic in the cashew creme sauce is amazing….pretty simple recipe, just need to soak the cashews in cold water overnight/8 hours.


Ingredients:
-1 cup raw cashews, soaked
-3/4 cup vegetable broth (low sodium preferable)
-2 tablespoons lemon juice, divided
-2 cloves garlic, peeled
-12 ounces pasta
-1 tablespoon olive oil
-3 ears of corn (or can use like a bag of frozen corn and bring to room temp)
-1/3 cup fresh basil, chopped
-1 teaspoon lemon juice
-salt and pepper to taste

Instructions:
1. Once cashews have soaked, add them to a blender with the veggie broth, 1 tablespoon lemon juice, garlic and a punch of salt/pepper. Blend on high until creamy.
2. Cook pasta according to package
3. While pasta is cooking, cut kernels of corn off the cob (if applicable) and heat the olive oil in a large non-stick skillet on medium high. Add the kernels. Sauté for 3-4 min, reducing heat as needed or until the corn has browned slightly.
4. Drain the pasta when done and return to the pot. Add the cashew cream sauce and toss to combine.
5. Now add the corn, Basil, remaining 1 tablespoon lemon juice, and lemon zest. Toss to combine everything and serve.
