CREAMY CHILLI DAAL CURRY with TOFU & SPINACH by @sisterz_with_taste

Ingredients:?
– 1tbsp coconut oil
– 3 small red onions / 2 medium red onions
– 2 chopped garlic cloves
– 1 tsp ginger
– salt to taste
– 1 tsp ground turmeric
– 1 tbsp ground corriander
– 1 tbsp red pepper flakes (more or less depending on how spicy you like it)
– 1 tbsp garam masala
– 3 cups water
– 1 cup red lentils
– 1 can coconut milk
– 1/2 can of red kidney beans
– 2 cups chopped spinach
– 1 block marinated extra firm tofu cut into cubes
– 1 lemon

Directions:?
– wash & soak the lentils for 1hr
– heat the oil in a large pan & add the chopped onion, garlic & salt, sautéing until translucent
– add the turmeric, ground corriander, red pepper flakes, curry powder and stir for a minute allowing the spices to become fragrant
– add the water and lentils before stirring in the coconut milk
– cover the pan & let it simmer for 25mins until the lentils soften
– stir in the ginger, salt & kidney beans
– stir in the spinach & tofu cubes
– cover the pan & let it simmer for 5mins on a low heat
– squeeze the juice of 1 lemon & enjoy warm with some rice and naan bread!! ??
