Creamy cashew vegan sausage pasta with rocket picked from the garden 🍝🌿 I followed @tiffanyc_watson’s delicious recipe and it tasted sooo creamy like carbonara 😍 I bought this spelt casarecce pasta yesterday from @thezerowastecompany which is a completely plastic free store aiming to provide a zero waste environment for customers (as can be seen in the photos!) 💓 it is such a lovely little place which also does fresh fruit and veg and it is SO important to support eco friendly small businesses like this if you have one near you! 🌟

🍝 creamy cashew pasta recipe 🍝
• 100g soaked cashews (soaked overnight or for 1 hour in boiling water) • 1/2 tsp salt • small cloves roasted garlic • 100ml water • 100ml almond milk • 1/4 tsp cayenne pepper • half a lemon juice • 1 tsp Tamari • pepper •

Other ingredients: Pack of mushrooms • smoked paprika • 400g pasta • 4 @lindamccartneyfoods sausages • 2 big handfuls of spinach •

Toss mushrooms in smoked paprika, salt and pepper and cook in the oven till crispy 🤤 take them out to cool

Drain the cashews and place in blender with milk, water, 1/2 a roasted garlic clove, salt, lemon juice, tamari and 1/4 tsp cayenne pepper for two minutes till smooth (add more milk for thinner consistency!)

In the meantime, cook your pasta and sausages 🍝 when they’re ready, chop up the sausages and place in a pan with the wilted spinach, give a little stir fry and then add the cashew sauce and pasta and there ya have it 💫💫
