Cream of Butternut Squash Soup.

This was delicious! I’ve shared the recipe in my reels & below.
.
I added some mixed beans for protein but you can leave them out for a smoother soup. Or add chickpeas.
.
Served with homemade wholemeal soda bread.

Ingredients – Serves 2.
1 butternut squash – cubed (I left the skin on).
1 onion – chopped.
2 cloves of garlic – chopped.
1 veg stock cube.
900ml boiled water.
Season with pink/sea salt & pepper.
1/2 tsp cinnamon.
3 tbsp nutritional yeast.
1/2 cup of dairy free cream.

Chop the squash, onion & garlic. Heat 1 tbsp olive oil in a large pan. Add the veg & gently fry for 5 minutes to slightly soften.

Mix the stock cube in the boiled water & add it to the pan. Season with salt & pepper.
.
Bring to the boil & lower the heat. Simmer gently for 15 minutes, stirring occasionally.
.
Add the nutritional yeast.
.
Remove from the heat & blend (be very careful if pouring into a blender).
.
Return to the heat & add the cream, cinnamon & beans/chickpeas (optional).
.
Simmer for another 10 minutes stirring every few minutes.
.
Serve with fresh bread.
