Cowboy chilli jacket pot with cheeze, homemade guac and creme fraiche ?

My gran has been slowly cutting meat out of her diet ? so I volunteered to make her a chilli… except tomatoes irritate her arthritis ? hence the ‘cowboy’ (basically it’s just chilli sans tomatoes). It’s topped with vegan @mexicanacheese and @koko_coconutuk and the @oatly crene fraiche.

And the recipe is below ⬇️

1-2 tbsp vegan butter
1 pack vegan mince (I used @lindamccartneyfoods)
Handful mushrooms, sliced
1 teaspoon salt
2 onions, chopped
4 garlic cloves, minced
500ml stock, I used vegan beef @oxo
1 ½ tablespoons chilli powder
1 tablespoon paprika
1 tbsp smoked paprika
1 teaspoon cumin
2 tsp liquid smoke
1 tin black beans, rinsed
1 tin sweetcorn

Optional: coriander, chives or spring onions to garnish

• Add butter to a large pan and brown off onions, mushrooms, mince and garlic (careful not to burn the garlic.

• Add spices, stir to coat, then add stock. Simmer for 30 mins til stock reduces, stirring occasionally.

• Add beans, sweetcorn and liquid smoke. Stir and simmer for a further 20-30 mins.

• Season to taste and serve with rice, jacket potato or garlic bread and salsa, guac, sour cream, whatever you fancy.
