COUS-COUS, KALE AND FALAFEL BUDDHA BOWL RECIPE 🥗

I was never a fan of cous cous until I made it myself and the recipe below is the one we always use for perfect cous cous. For the Kale we fried it in some olive oil with chopped garlic and seasoned with sea salt and chilli flakes until crispy. 🥬 We put shop bought hummus and falafel on top and drizzled some balsamic glaze and Siracha Mayo on top. 🧆
Such an cheap easy meal to make and it’s so good too! You can customise this recipe however you like by swapping things out, get creative! Tag me in any pictures if you recreate 🙌🏻🥗
2 tablespoons olive oil
1 medium red onion chopped
1 yellow bell pepper chopped
2 cloves garlic minced
salt & pepper to taste
½ teaspoon paprika
½ teaspoon ground coriander
¼ teaspoon turmeric
½ teaspoon ground cumin
1 tin of chickpeas
1½ cups of vegetable stock
1 cup instant couscous
In a medium-size skillet heat the oil over medium heat.
Add red onion, peppers, and sauté 10-15 minutes or until brown and all the vegetables are your desired tenderness
Add the garlic, sauté another minute.
Mix in the salt & pepper, paprika, ground coriander, turmeric, cumin ground cinnamon. Stir-fry until fragrant (about a minute).
Stir in the chickpeas. Followed by the stock.
Stir in the couscous. Remove from heat and let stand 5 minutes or until liquid is absorbed. Fluff and serve.
