Corn and Cherry Tomato Salad🌽

INGREDIENTS:
3 Cups corn kernels (about 4-5 cooked cobs of corn)
2 Cups cherry tomato, sliced in half
1/4 Cup red onion, slices
3 Tbsp olive oil
2 Tbsp fresh lime juice
Sea salt and pepper

INSTRUCTIONS:
1. Boil corn. Once cooked, let it cool then get a cutting board and cut down the sides of the cob to remove the kernels.
2. In a small bowl, whisk in the olive oil, lime juice, salt and pepper. And set aside.
3. In a medium bowl, add corn, tomato slices and red onion.
4. Drizzle dressing on top and toss to combine.
