Cookies for when you want it to be simple but a litttllle extra! 🍪 I forgot to take a picture of the 💯 XL cookies I made for a business order yesterday!! So i had to do a bedroom cookie photo shoot with Chonkers instead 💁🏽♀️ Anywayz, these cookies are GOOD. Vegan White Chocolate & Dark Chocolate w/ Dried Cranberries. They are chewy with a bit of crunch, tender and easy peas to make. Here’s the recipe 🦄🧚😚
⚖️ 4 XL cookies
⏰ 40 minutes
80g Vegan butter, room temperature.
40g brown sugar
40g white sugar
2x flax eggs
1/2 tsp baking powder
120g spelt flour
2/2 tsp salt
A bit of nutmeg
50g white chocolate
30g dark chocolate
40g dried cranberries
🧐 INSTRUCTIONS :
1️⃣ Preheat oven to 195c. Mix room temperature butter & both sugars together with an electric mixer for 2 minutes.
2️⃣ Add flax, baking soda, flour, salt, nutmeg and mix more on lowest speed until combined. Don’t over mix! 🐹
3️⃣ Make balls of cookie dough and arrange them on a tray with space apart from each other. Pop them in the oven and bake for 12 minutes, if you made 4 big cookies. If you made smaller cookies they’ll need less baking time.
4️⃣ When they have spread and are beginning to get brown around the edge take them out of the oven. Leave them on the hot baking tray to cool so theyll get s bit chewy. Let them cool and enjoy with a big cold glass of creamy oat milk. 🤍
