Being able to run mid-day and not absolutely drown in sweat is so nice; it’s probably on of my favorite things about fall. Annndd the leaves changing color, sweaters, scented candles, squashes, and so much more:). Considering the circumstances, fall festivities will definitely look different this year but that doesn’t change my love for this season πŸ₯°πŸ To continue the fall feels from the last post… here is a super duper easy mug cake recipe! If you’ve been looking for a gluten-free, vegetarian, or dairy-free sweet treat… this is IT. Inspired by #RunFastCookFastEatSlow cookbook,( I know. Shocking πŸ˜‰).-MINUTE MUG-CAKES (COCONUT-VANILLA) #dEATS:
-1 teaspoons virgin coconut oil
– 1/4 cup almond meal
– 1 egg
– 1 1/2 tablespoon of honey
– 1/4 teaspoon baking powder
– 1 tablespoon of coconut flour
– 1 teaspoon chia seeds
– 2 tablespoons of shredded coconut
– 1/2 teaspoon of vanilla Directions: Put coconut oil in a microwave-safe mug and microwave until melted. Add in the rest of the ingredients and stir to combine. Microwave for 90 seconds and let cool after. Enjoy!
