Coconut Dahl With Portobello Mushrooms, And Halloumi Drizzle

Coconut dahl with portobello mushrooms, and halloumi drizzled with a toasted cumin, garlic and ginger oil.
Tonights dinner, definitely to be cooked again.

Serves 2 + extra dahl for 2.
Simply made by cooking:
200 gms red lentil
2 large chopped tomatoes
1 brown onion diced
1 tsp tumeric powder
1 tin coconut milk
300 ml water
2 good pinches of rock salt

Place all the ingredients in a pan, bring to the boil, and simmer gently for 30 mins.

3 thickly sliced portobello mushrooms
1 pack of halloumi cheese, cut into 9 squares
1/2 tsp ground coriander

Fry in 1 tbsp of corn oil until mushrooms and halloumi are golden all over.

Heat 2 tbsp of corn oil in a frying pan and add 1/2 tsp of cumin seeds. As soon as they start to pop and move, add two large sliced garlic cloves, and 1 thumb of ginger cut into matchsticks.
Cook until browned.

Assemble your plate, dahl, mushrooms and halloumi, drizzle with the flavoured oil, then garnish with fresh coriander.
