Coconut and raspberry slice 🥥 🥥

✳ ———- Ingredients ———- ✳

🔹️For the Base Layer:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon vanilla
pinch of salt
1/2 cup vegan butter
2 tablespoons aquafaba (liquid from can of chickpeas)
1 tablespoon maple syrup

🔹️For the Jam Layer:
1/2 cup raspberry jam of your choice

🔹️For the Top Layer:
1 cup of desiccated coconut
2 tablespoons aquafaba
1 tablespoon maple syrup

✳ ———- Method ———- ✳

Put the flour, baking powder, vanilla and salt in a mixing bowl and mix together. Add the butter and gently mix with your fingers until the mixture resembles crumbs. Add the aquafaba, one tablespoon at a time, and knead until it forms a dough. Add maple syrup at this time, as well.

Press this mixture evenly into an 8×12-inch pan or container.

Spread the jam on top of this layer evenly.

In a separate bowl, mix coconut, aquafaba, and maple syrup. Spread this layer on top of the jam evenly.

Bake in the oven at 180゚C for 25-30 minutes, being careful not to brown the top too much.
