COCONUT AÇAÍ MOUSSE 🥥🫐

➡️RECIPE: Serves 2

300g silken tofu (usually 1 pack)
3 tbsp coconut cream (full fat, solid part from the can)
3-4 tbsp açaí powder
1/2 tsp psyllium husk (opt. to make it a bit more creamy)
3-4 soft dates or 4 tbsp granulated sweetener (I used erythritol)

1. If using dates, soak them in hot water for 15-20min.

2. Blend all the ingredients in a blender or use a stick blender and blend until smooth and with no lumps remaining.

3. Transfer to jars and let them set in the fridge for at least 4h, preferably overnight.
