alright ppl this is my fav muffin recipe OF ALL TIME & the best part is that it’s totally customizable!!! you can literally sub out peaches for any fruit your heart desires ❤️ as you all know, i’m currently working to use up a surplus of fresh georgia peaches before they go bad, so the first step was these delicious peach muffins!! definitely expect some more peach related content in the future ?

here’s the deats:

? ingredients:
peaches-
-1.5 cups diced peaches +1/4 cup reserved for topping
-3 tbs all-purpose flour
-1 tsp cinnamon

batter-
-.5 cup mashed banana
-3/4 cup sugar
-.5 cup plant milk of choice
-1/3 cup coconut oil, melted
-1 tbs vanilla extract
-2 tsp cinnamon
-1 tsp nutmeg
-1 cup all-purpose flour
-2 tsp baking powder
-pinch of salt

? method:
1. preheat oven to 400°F
2. in a medium bowl, combine the “peaches” ingredients (save the 1/4 of peaches for topping the muffins later). set aside
3. in a large bowl, mash the bananas with a fork
4. add the sugar, milk, coconut oil, vanilla, cinnamon & nutmeg to the bowl and whisk until combined
5. add the flour, baking powder & salt and stir until just combined (batter will be pretty thick)
6. fold in the 1.5 cups of peaches & any excess flour at the bottom of the bowl
7. pour the batter into a muffin-tin lined muffin pan, dividing evenly between 12 cups
8. top each of the muffins with a few pieces of peach, using the 1/4 cup that you set aside earlier
9. bake for about 17-20 mins or until toothpick comes out clean & let cool in muffin tin for 15 mins before transferring to rack
