CHUNKY CHICKPEA SANDWICH

This flatbread ? is made guilt free. For all you healthy eaters who miss a good sandwich ? ? You can also toast this crispy for crackers or keep them soft to eat as a flat bread.

Flatbread:
1 C Oats blended to flour
1 C Chickpea flour toasted
1/4 Onion, apple, celery and
2 small carrots process to fine bits

Mix all ingredients with 1 tsp salt, Italian seasoning, garlic and onion powder. Mash with hands to form dough. Roll flat and thin on nonstick baking sheet. Cut into desired squares or triangles for crackers. Bake 400° for 10 minutes turn over for another 5 minutes.

Chickpea filling:
1 can Chickpeas drained
1/4 onion, apple, celery
1 tsp salt
1/2 tsp garlic and onion powder
2T lemon, to taste
1 tsp maple syrup
1 TB mustard
Pulse until spreadable consistency. Do not overprocess.

Add ons:
Avocado
Lettuce
Tomato
Onion
Mustard
Walnut Balsamic dressing
