Chocolate Zucchini Muffins & Loaf

Ingredients:
– 1/2 cp vegan margarine
– 1/2 cp vegetable oil
– 1 3/4 cp sugar
– 2 vegan eggs (I used 2 tbsp of ground flax seed and 2 tbsp of water)
– 1/2 cp coconut milk
– 2 1/2 cps all purpose flour
– 6 tbsp cocoa powder
– 1 tsp baking soda
– 1/2 tsp baking powder
– 1/2 tsp cinnamon
– 2 cps shredded zucchini
For the topping:
– Carob chips
– Pecans

Instructions:
– Wash and shred 2 cps of zucchini.
– Preheat oven to 325 degrees Fahrenheit.
– Mix the oil, margarine, and sugar together until creamed.
– Add all other ingredients. Mix well.
– Transfer to cupcake liners or a greased baking pan.
– Sprinkle carob chips and pecans on top.
– Bake muffins for 30 minutes. Bake the loaf for 40 minutes.
– Cool on a baking rack.
