chocolate pie just the filling multip img 0 44f8ff0c


•12 oz silken tofu
•1 tbsp cacao powder
•2/3 cup canned coconut milk
•2 tbsp organic sugar
•1/2 tsp vanilla
•1/2 cup chocolate chips
OPTIONAL: peanutbutter and/or your choice of fruit

•Mix together on high all ingredients with the exception of the chocolate chips. Mix until well blended and smooth, this may take several minutes.*
•Microwave the chocolate chips in 30 second intervals until melted.
•Add the melted chocolate to the mixture and continue to mix until everything is well incorporated.
•Pour the mixture into your favorite pie crust** and refrigerate for at least 2 hours until it is firm. You may use the freezer for quicker firming.
•Optional peanut butter swirl: Lightly heat peanut butter and pipe onto pie. You may put the peanutbutter in a ziplock bag and cut a small corner off to squeeze the peanut butter out of to create any design you want.
•Best served with berries, bananas included!

*I used the whisk attachment on my KitchenAid mixer
