Super gooey brownies reinvented in cookie form 😍 topped with hazelnuts and a melted chocolate drizzle. These are pure chocolatey indulgence and they’re gluten free❤️

INGREDIENTS (makes 14 cookies)
🍫100g vegan chocolate
🍫80ml aquafaba
🍫140g sugar (I used caster)
🍫80g almond butter
🍫100g ground almonds
🍫40g cocoa powder
🍫1/4 tsp salt
🍫1/2 tsp bicarbonate of soda
🍫Chopped hazelnuts
🍫4 squares vegan chocolate, melted (optional)

METHOD
1. Slowly melt the chocolate over a Bain Marie and then set aside to cool
2. Preheat oven to 170°C (fan) and line 2 baking trays
3. Whisk aquafaba with an electric whisk until thicker and foamy (around 5 minutes)
4. Gradually add in the sugar, whisking after each addition, then fold in the warm melted chocolate
5. Fold in the almond butter
6. Gradually add the dry ingredients and mix until well combined and a thick, stiff batter has formed
7. Use 2tbsp batter per cookie and roll into a ball in your hands, pop on a baking tray and top with some chopped hazelnuts
8. Bake for 10 mins (I did them in 2 batches for an even bake). Don’t be fooled by their softness, they’ll firm up as they cool!
9. Once cooled or slightly warm, drizzle some melted choc over and enjoy!!✨
