🔥 CHILLI SIN CARNE 🔥 Who fancies some? Love this veganised version of chilli con carne. My favourite things about chillis are the rich flavour of the sauce and the heat. I always have to add more chilli to the recipe because I love my food to be hot like fire 🤤⁠

🍴Serves: 4. Time: 45 mins⁠
⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠
🥗 INGREDIENTS⁠

2 tsp of oil⁠
1 onion, chopped⁠
4 cloves of garlic, finely minced⁠
1 green bell pepper, chopped⁠
1 small carrot, grated⁠
4 large tomatoes, roughly chopped⁠
5 tbsp tomato puree⁠
2 cups vegan stock⁠
2 cans of kidney beans, drained⁠
1 tsp onion powder or granules⁠
2 tsp coconut sugar or sugar of choice⁠
1 tsp ground cumin⁠
1 tsp garlic powder⁠
1/2 tsp salt⁠
1/2 tsp black pepper⁠
1/4 tsp hot chilli powder⁠
1-3 hot chilli peppers, depending on your preference.⁠
1/4 smoked paprika⁠

🥘 METHOD⁠

1️⃣ In a large pan or pot over medium heat, add in the oil. Sauté the onion for about 5 minutes until translucent, add the green pepper and garlic and sauté for an additional 1-2 minutes, stirring occasionally.�⁠
2️⃣ Mix in the tomatoes and sauté for another 3 to 5 minutes.�⁠
3️⃣ Add the rest of the ingredients, bring to a boil and simmer for about 40 minutes or longer if your prefer, stirring occasionally. Add more chilli and season to taste.⁠
4️⃣Top with vegan cheese (optional) Serve with rice, pasta or potatoes.⁠
