Chilli corn mushroom.
I always thought? that vegan and gluten free food would not taste good. This recipe is nothing but delicious. I am also a student and it has been always hard for me to cook fancy recipes because of the lack of kitchen space in my house and also limited groceries (y’all know we are broke most of the time haha?). So here is one simple recipe which does not require complicated supplies and is super easy to make.

▶️250gms button mushrooms, cut and washed
▶️1/2 cup corn
▶️1/2 cup chopped bell peppers
▶️1/2 cup ▶️1 cup oil for frying the mushrooms
▶️1/4 cup corn starch or you can avoid this step and directly fry the mushrroms
▶️Salt and pepper to taste ▶️2 garlic cloves
▶️1 tsp chilli garlic sauce
▶️1 tsp GF low sodium soy sauce
▶️1tsp ketchup to give that tangy taste
▶️2tbsp water, add more if needed
Mix the corn starch with water until it forms a paste, add salt and pepper. Dip the mushroom in it till it’s coated well and fry until golden brown and crispy. I use medium to high flame for this. In a separate pan put 2tbsp oil, add the onions and saute till it’s translucent. Add little salt to make the process faster. Next, add the bell pepper and corn and let it cook for 2-3 minutes. Next, add the mushroom and the sauces. Stir all the veggies so it’s well coated with the sauces. Cook on medium to high flame for 2 minutes and the dish is ready.
