Chili basil eggplant for the win! #😋 I’ve always been intimated by Asian cuisine which is silly because I’ve been cooking since I was a kid. I think Thai and Viet food are the best flavor profiles, especially if you can make it at home with high quality ingredients. Here’s a clean recipe if you’re Interested:

3 eggplant (the long, skinny type)
1 1/2 cups basil leaves
2 green onions or scallions, minced
2 cloves of garlic, minced
2 tablespoons tamari
1 tablespoon maple syrup
1 pinch red pepper flakes
2 tablespoons Extra virgin olive oil
1 tablespoon water

Make sure you soak the cubes of eggplant in saltwater for 5 min, strain and dry before cooking.

I may have put like 3x the amount of garlic posted above 🤤🧄 so good!
