chickpea veggie stew 🍲 this is such a hearty, filling and delicious dinner that can be meal prepped with basically zero effort! packed full of nutrients and protein, this is meal is a staple! you can use whatever vegetables are in the fridge, helping to eliminate food waste! you could definitely sub the chickpeas for white beans to achieve a similar stew that’s still high in protein!!

✨recipe:
1 can chickpeas
1 can diced tomatoes
Brown onion
Carrot
Broccoli (including the stems!)
Zucchini
Spinach
Spices/Seasonings of choice (I used salt, pepper, garlic powder, onion powder, cumin and paprika)

* dice the onion and sauté in a large pot
* while the onion is cooking, prepare all other vegetables and rinse/drain your chickpeas
* once the onion is ready, add in the canned tomatoes, chickpeas and veggies! [tip: I put in my harder veggies (broccoli stems, carrots) in first and added my softer veggies (zucchini, spinach) in later!)
* you could add some water or stock to the pot if desired to give a more liquid texture or if needed to combine all ingredients together
* don’t forget to season! add your spices and combine
* put the lid on for 5mins or until all ingredients are cooked (if you want to reduce the liquid, leave on low heat until done)
store in the fridge for up to a week! you could serve this with some rice and with some parsley or coriander on top! enjoy ❤️
