Chickpea tuna! But in sushi ??

So I think every vegan has their own version of chickpea tuna. It’s kinda a staple. And while it’s been a very long time since I’ve eaten fish, the chickpea version certainly has fishy vibes thanks to the nori and the capers. And I prefer good vibes over dead fishy vibes anyways ?

For the chickpeas…

1 can chickpeas, drained and rinsed
Juice of half a lemon
3 Tbl hummus
1 sheet of nori, crushed
1 tsp capers rinsed and finely chopped
1 Tbl soy sauce
1 Tbl nutritional yeast
2 tsp maple syrup
2 spring onions, sliced

? in a bowl using a potato masher or fork, mash up the chickpeas well but not so that they’re a paste. Stir through the remaining ingredients

That’s it! A little easier than depleting our oceans of fish, right?! I added mine to maki (recipe for how I do my sushi rice to come) with some avocado and egg free kewpie mayonnaise, but you could also use it to top some toast, as a sandwich filling or in a grain bowl.

Want a spicy tuna roll? Just add a Tbl or so of sriracha ?
