? CHICKPEA FALAFEL BOWL ?
I regularly make oven baked falafels because they are quick and easy to make, the ingredients are super cheap and you can batch cook them in bulk! ?
Perfect now that I’m back to work and in need of portable tasty nutritious lunches again!
I made both the falafel and the hummus???
The hummus is just tinned chickpeas, olive oil, lemon, garlic, salt and pepper – I LOVE it!
Sometime I mix it up with the falafel and have previously added beetroot or pea to the mixture but today I kept it simple with just chickpeas and onion then I added in herbs and spices such as fennel seeds, ground coriander and parsley. ?
The bowl was made up of spinach, avocado, carrot and pickled red cabbage. I drizzled on some tahini and sprinkled on some pumpkin and sesame seeds – perfection!
And what’s best is that I have enough ready for lunch tomorrow!
