Chickpea Curry πŸ›

This is a really quick and simple Curry for in the week. Takes as long as the rice takes to cook.

Ingredients:
– 1 Red Onion
– 1 Clove of Garlic
– 1 Red Chilli
– Thumb sized piece of Ginger
– 400g can Chickpeas (Drained and Rinsed)
– 400g can Tomatoes
– 400g Coconut Milk
– 1 tbsp Curry Powder
– 1 tsp Cumin Powder
– 1 tsp Ground Coriander
– 1 tsp Ground Paprika
– Large Pinch of Salt
– Black Pepper to taste
– 1 Juice of a Lime

Steps:
1. Heat some oil in a pan on a medium heat. Once hot, add diced red onion and chopped garlic.

2. Add chopped chilli, and grate the ginger into the pan.

3. Add the spices and cook for 30 seconds

4. Add the can of Tomatoes, Coconut Milk and Chickpeas. Mixed well.

5. Add salt, pepper and the lemon juice. Cook until you get the thickness you like.

6. Serve with rice
