I don’t know why but I always forget how much I loveeee Chickpea curry. Stole this recipe from @rachelkyaffe Instagram 🥰 Love that this recipe has a whole head of cauliflower, which makes it super thick and filling. It’s also so easy to make, especially if you have an instant pot! It can also be made on the stove top but it will just take more time to cook in order for the cauliflower to soften properly.

Ingredients:
1 and 1/2 cup chickpeas
1 whole cauliflower
1/2 red onion
2 cloves of minced garlic
1 tbsp minced ginger
1 can of coconut milk
1/2 cup vegetable broth
Handful of kale
1 tbsp turmeric
Garlic powder, Salt, and Pepper

Instant pot directions:
1. Pressure cook all ingredients for 24 minutes
2. Let sit for another 15 minutes as instant pot release steam naturally
3. Eat plain or pair with greens, rice or quinoa!
