Chickpea coconut curry
????

Ingredients
Can of chickpeas
1-2 tbsp coriander
4-5 garlic cloves
1 red bell pepper, sliced
1-2 large Carrots, chopped
2-3 tbsp ginger, grated
Can of full fat coconut milk
1 tsp turmeric powder
1 tsp cumin
1/4 tsp red chili pepper
1 tsp garam masala
Salt and pepper to taste
Fresh coriander (cilantro)
1 lime, juice
Red onion, sliced

Heat oil in a skillet over medium high. Stir in onion and coriander stems. Stir for 5-10mins until onion is golden on edges. Add garlic and ginger, stir for about 2 mins. Stir in chickpeas and red bell pepper for another 2 mins. Stir in turmeric powder, cumin, chili, garam masala, salt and pepper. Cool for additional 30 seconds and then add in the coconut milk and carrots. Stir and bring to a simmer. Continue on a simmer and cover for 10 mins. Stirring occasionally.
Serve over rice with fresh coriander, sliced onion, and lime.
