No one can tell that these beautiful blondies are made with chickpeas instead of flour, because they taste exactly like a peanut butter chocolate chip cookie! The best part of this recipe is the fact that the chickpea blondie dough is amazing (and vegan!) so you can eat it raw ?? These wholesome ingredients make the recipe gluten free, dairy free & vegan, so no matter your dietary requirement this recipe is a fabulous choice ????

1 can Chickpeas, rinsed and patted dry
1/2 cup all natural peanut butter (or almond butter) (I used @mayversfood Protein + Peanut Butter)
1/3 cup pure maple syrup (I used @lakantoaustralia Maple Syrup)
2 teaspoons Vanilla Extract
1/2 tsp salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup vegan (or regular) chocolate chips plus 2 tablespoons

Preheat oven to 175 degrees Celsius
Place all the ingredients (excluding choc chips) in a food processor and blitz until smooth
Add 1/3 cup of choc chips into dough and fold through
Place into a greased square baking dish (8 inch x 8 inch)
Place remaining choc chips on top of the dough
Bake for 20-25 minutes (be careful not to over cook as you want the blondies to be dry!)
Allow to cool before slicing into 12 pieces
