Chickpea & cabbage curry ?
I’ve been working on new recipes recently and I think this one has to be my favourite yet. This will definitely be a regular in my house, it’s so healthy and comforting, and unbelievably easy to make.
Ingredients (serves 2)
2 servings of rice
300g white cabbage (shredded)
1/2 cup broth
2tsp curry powder
1 green chilli
1 can chickpeas (drained and washed)
1 can full fat coconut milk
1tsp chilli powder (optional)
Sesame seeds (optional)
Cook rice in accordance to packet instructions.
Meanwhile, heat oil in a pan and add in green chilli. Sauté for 1-2 minutes, then add in curry powder and chilli powder (if using).
Continue to cook for a further 1-2 minutes.
Add in cabbage and vegetable broth, stir and bring to boil.
Add in coconut milk and chickpeas.
Reduce heat and simmer for 15 minutes.
Serve with rice.
Garnish with coriander & sesame seeds.
