Chickpea and Tofu Patties! And yes, that means they are high in protein and taste amazing (promise!). Here’s the recipe:

Ingredients:
• 2 Cups soaked chickpeas
• 1 Block firm tofu
• 1 Cup chickpea flour
• ½ Cup raw walnuts
• 1 Medium onion
• 4 Garlic cloves
• 1 Tbsp chia seeds
• 1 Tsp turmeric powder
• 1 Tsp smoked paprika
• 1 Tsp cumin
• Salt and pepper to taste

Preparation:
• Squeeze out the water out of the tofu by using your hands.
• Add all the ingredients in a food processor and pulse a few times until it turns crumby. Don’t over-process it; otherwise, it will get mushy and unmanageable.
• Heat a pan on medium-high heat and add a little oil to prevent the patties from sticking to the pan.
• Preheat the oven at 400·F and prepare a baking sheet with parchment paper.
• Damp your hands, form the patties, and cook them until golden and crispy.
• Place the patties on the baking sheet, and bake them for 20 minutes –they will turn crispier on the outside and soft on the inside.
• Enjoy!
• Storage the leftovers in an airtight container in the freezer up to one to two months.
