CHICKPEA AND BROWN RICE FRITTERS?

Rainy weather calls for some comfy food. I can’t wait for summer to be honest, feels like this winter has been too long?

Ingredients:
1 tablespoon olive oil
1 small white onion, finely chopped
1 can no salt added chickpeas
1 cup cooked brown rice
1 egg or flax-seed egg replacement, if vegan
salt and pepper, to taste
olive oil, for frying
fresh parsley and basil pesto, for serving
Method:
Heat oil in a frying pan and add onions. Cook for 5 minutes or until golden brown, then set aside. Mash chickpeas in a mixing bowl with fork. Add in onions, brown rice and egg/flax-seed egg. Season to taste and mix until the mixture is well combined and sticky.
Form fritters with your hands and fry for about 3 minutes on both sides until golden brown. Serve immediately with fresh parsley and pesto!
