Cherry Tomato Sauce. This sauce would be great with bruschetta or pasta dishes.

INGREDIENTS:
5 Cups cherry tomato
5 Cloves of garlic fresh, minced
1/2 Tsp oregano
1/4 Cup olive oil
Sea salt and pepper to taste

INSTRUCTIONS:
1. Slice cherry tomatoes in half and place them in a large bowl. Add minced garlic, oregano, salt, olive oil and toss together.
2. Preheat oven to 400- 450° F. Place parchment paper on a baking sheet.
3. Spread cherry tomatoes on baking sheet in an even layer, skin side down. Top with freshly ground pepper.
4. Bake in the oven for 30 minutes until they begin to soften.
5. Let tomatoes cool then blend for a creamy sauce texture. Store in the fridge for 1 week or in the freezer for 4 month.
