?Cheezy Layered Tacos?
Since yesterday was Taco Tuesday, I decided to slice up some @gardein fishless fish for dinner ?.
Taco Assembly
fishless fish
chopped lettuce
pico de gallo
vegan sour cream
shredded vegan cheese
street taco flour tortillas
Pico de gallo
1 vine tomato
1 tbs chopped cilantro
1 tbs chopped jalapeno (no seeds)
1 tbs chopped red onion
1 tbs lime
1/2 tsp minced garlic
salt, pepper, and garlic powder to taste
1- I eyeballed the ingredients for the pico de gallo to make a small amount just for dinner, so measurements are approximate. Just mix it all up in a small bowl, cover, and place it in the fridge while you get everything else ready ??.
2- Follow the directions for @gardein fishless fish. Once it is done, allow it to cool and then slice them into strips to fit the tacos.
3- If you want a side of refried beans, cook a can on the stovetop on medium heat. Add a splash of almond milk and sprinkle garlic powder (❤️garlic ?) and pepper to taste.
4- Take 2 tortillas and arrange a layer of shredded vegan cheese in between. Place it on a nonstick skillet over medium heat. Heat it a couple minutes per side while gently pushing down with a spatula to get the cheese to really stick.
5- Arrange them on your plate and lay on the strips of fishless fish. Top with chopped lettuce, pico de gallo, guacamole, and vegan sour cream.
6- Add your side of beans and a lime slice ?
