Cheesy Vegan Mac & Cheese ✨
I have attempted vegan macaroni and cheese so many times and this was by far the best. If you’re in need of a rainy day comfort meal (especially if you’re in Wellington where the rainy days don’t seem to end 🙄), keep reading 👇🏽😋🤤
1/2 onion, chopped finely
1/3 cup margarine
1/3 cup flour
750ml soy milk
1 tbsp Dijon mustard
2 heaped tbsp nutritional yeast flakes
1/4 cup breadcrumbs
Salt & pepper to taste
4 portions macaroni
Preheat oven to 180 degrees Celsius.
Cook macaroni according to packet and put in a baking dish.
Heat soy milk in a saucepan with the chopped onion and bring to a slow boil. Remove from heat.
Melt margarine in another saucepan. Add flour and whisk quickly to mix. Gradually add the milk and onion, whisking constantly until completely combined. Bring to the boil, whisking continuously until mixture begins to thicken. Add nutritional yeast, mustard and salt & pepper and whisk until combined then remove from heat. Mix into the macaroni in the baking dish. Sprinkle the breadcrumbs over the top and bake in oven for 20-25 minutes until golden on top.
