“Cheesy” Stuffed Vegan Pasta, AKA one of my all-time favourite dinners ??

This is the perfect balance of flavour, simplicity, indulgence and cosiness. In other words, the perfect winter weekend comfort food!

The creamy filling is made of tofu, hummus or cream cheese, fresh herbs and spices – and then you have that gorgeous homemade sauce for the base ❤️ Perfect with crusty bread or garlic bread ?

Have I convinced you yet?! Full disclaimer here: my body hates tofu (although I adore it ?), but this meal makes it worth it!

Here’s what you need (message me for the recipe!)
? VEGAN CHEESY STUFFED PASTA ?
One portion tomato pasta sauce (I use homemade)
For the pasta –
One 250g pack conchiglioni pasta
1 small onion, peeled and diced
2 cloves garlic, minced
200g tofu
1-2 tbsp plant-based milk
250g cream cheese of choice or hummus
3 handfuls spinach
Handful basil, chopped
1-2 tbsp Nutritional Yeast (to taste)
1 tbsp lemon juice
1 tsp oregano
1/2-1 tsp chilli flakes (optional)
Salt and pepper, to taste
Optional: Chunk vegan cheese, to grate over the top
