I know that not everybody likes tofu so I thought that some of you might be interested in an Asian-inspired bowl made with chickpeas! Most vegan Asian recipes are centred around tofu which can be hard if you can’t eat soy or just simply don’t like it.
This bowl was really easy to make and is made from cheap and healthy ingredients. Chickpeas are the protein for this dish and can be purchased from Woolworths for just 80c a can!
This dish is best served with steamed rice (white or brown is fine), vegan Kewpie mayonnaise, spring onions and sesame seeds! I was a little impatient and didn’t let my chickpeas fully crisp up in the oven but they still turned out fine! If you want yours to be crispier, make sure they are completely dry after rinsing them before coating them in the sauce.
