涼拌萵筍 (Celtuce salad) ? ? ?.

⏰: 15 minutes.

✳️ Ingredients:
萵筍/Celtuce stem (found at most markets that sell Asian food, Price Smart and T&T carry it), 陳醋或鎮江醋 (Chinese black vinegar or Chinkiang vinegar), minced garlic, white pepper powder, Thai chili, sugar, soy sauce, hot/ boiling oil.

➡️ Steps:
1) Peel and slice celtuce into small thin pieces like the photo.
2) In a pot, boil some water. Once boiled, throw celtuce in and quickly blanch it.
3) Place celtuce in a ice bath or cold running water. Drain and plate then set aside.
4) Mince garlic ? and slice some thai chili ?. Place this on top of your celtuce then out it in the fridge.
5) In a bowl, mix the white pepper powder, vinegar of choice, sugar and soy sauce. Give it a taste. The sauce should be a balance between salty, sour and sweet, but adjust to your liking. If it isn’t salty enough add a bit of salt. If you like it more sour, add more vinegar.
6) In a pan or wok, heat up oil till it is boiled. You’ll know it’s ready when smoke comes it or if bubbles form around a wooden chopstick.
7) While you wait, take the celtuce out from the fridge and place near the pan. Pour the sauce on top of the celtuce and wait.
8) Pour hot oil directly over the garlic and chili to quickly cook it.
9) When ready to eat, mix salad and serve.
