Cauliflower Wings ✨

These are super delicious as a nibble before dinner or as dinner with rice, salad and/or beans 😋

Im not the biggest fan of spice so these are not spicy. To add spice swap out the tomato paste in the bbq sauce for 2 tbsp of sriracha 🔥

Ingredients:
1 head of cauliflower, cut into florets
2 tbsp olive oil

Batter (mix together in a bowl):
1/2 cup flour
1/2 tsp baking powder
2 tsp paprika
1/2 tsp salt
1/2 tsp pepper
1/2 cup soy milk

BBQ Sauce/marinade (mix together in a bowl):
70g (1/2 a pottle) tomato paste (2 tbsp sriracha if wanting spicy)
2 tsp olive oil
2 tsp maple syrup
1 tsp soy sauce

Preheat oven to 180 degrees Celsius.

Place florets of cauliflower in the bowl of batter and coat thoroughly. Place baking paper on a baking tray and spread cauliflower out evenly. Drizzle 2 tbsp of olive oil over the cauliflower and bake in oven for 20 minutes. After 20 minutes brush each floret with the BBQ sauce and place back in oven for 20 minutes. Once done brush over some more BBQ sauce and serve.

I served mine with brown rice, red kidney beans, rocket, spring onions and @culleys vegan smoked mayo.
