Cauliflower and Chickpeas with MADRAS CURRY🇮🇳
For this dish, I used @mayakaimalfoods Madras Curry, soso delicious and I could eat it with a spoon by itself honestly😭
One thing about Madras Curry is it’s cooking in many variations and cooking it India is more so a domestic practice for Indians, more than a cuisine.
1) Madras Curry
7) Coconut Milk
9) Grapeseed Oil
10) Onion, Garlic
✨ In a large saucepan, heat oil on medium heat and add the paste and stir for a minute or so. Once fragrant, add your onions and garlic (cook until softened).
✨ Add your cumin, diced tomatoes and coconut milk into saucepan. Make sure to stir well!
✨ Bring the sauce to a boil and reduce heat to simmer. At this time, add your chickpeas and cauliflower (washed).
✨ Leave to simmer for 15-20 minutes and stir often to make sure it isn’t sticking to the pan. We want the sauce to get thicker.
✨ Add Spinach and stir in until wilted. Feel free to add a little salt for extra taste.
✨ Serve and enjoy! I definitely recommend eating it with Naan, I didn’t because I was too lazy to make it but it’s an added plus.
Overall taste? 10/10. Definitely one of my favorite dishes to make😍😍😍😍
