CARROT PUMPKIN SOUP⠀

⁣+ GLUTEN FREE ⠀⠀⠀⠀⠀
+ SOY FREE⠀⠀⠀⠀⠀
+ OIL FREE ⠀⠀⠀
+ REFINED SUGAR FREE ⠀

Ingredients:⠀

350g pumpkin, cubed⠀
4-6 medium carrots, roughly chopped ⠀
1 red capsicum, cut in half
1-2 cups vegetable broth⠀
1 red onion, sliced⠀
4 cloves garlic⠀
1/2 tbsp fresh chilli, chopped⠀
1/2 tsp cumin powder⠀
1/2 tsp paprika powder⠀
1/2 cup fresh basil⠀
Salt & pepper, to taste⠀


Instructions:⠀

Preheat the oven to 400F/200C. Line a baking sheet with parchment paper.⠀

Place the pumpkin, carrots, capsicum and the whole garlic cloves into the oven for about 20-30 minutes. After 15 minutes, add the onions onto the baking sheet and let everything cook for another 10 minutes.⠀

Remove from the oven, let it fully cool. ⠀

Place all ingredients besides the broth in a high speed blender and blend until smooth. Add a bit of water if needed to keep it going.⠀
Now transfer the mixture into a large pot, add the broth and some salt and pepper if desired, and let it cook for about 5-10 minutes on low to medium heat.⠀

Serve in big deep soup bowls and garnish with some fresh basil. ⠀
